Ingredients:

  • 150g unsalted butter, at room temperature
  • 150g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 125g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 225g rolled oats
  • Optional: 100g raisins or chocolate chips

Directions:

  1. Start by creaming together some unsalted butter and light brown sugar until it’s light and fluffy. 
  2. Next, we’ll beat in a large egg and some vanilla extract to make everything nice and smooth.
  3. In a separate bowl, mix together some all-purpose flour, baking soda, salt, and cinnamon. Don’t worry if it looks a little dry – we’re going to add some beautiful rolled oats and raisins or chocolate chips to make everything come together..
