Undhiyu is a traditional Gujarati dish from India.
It is a mix of vegetables, including eggplant, potatoes, yam, and green beans, cooked in a spicy, sweet and sour sauce and is typically served with fried flatbread or roti.
Undhiyu is especially popular in the winter.

The name of this dish comes from the Gujarati word “undhu”, which means “upside down”, since undhiyu is traditionally cooked upside down underground in earthen pots which are fired from above.
