Not a rabbit, probably not Welsh, but definitely cheesy!

The Welsh rarebit is also known as a Welsh rabbit.
It is unknown if the dish was meant as a replacement for eating rabbit or the word “rarebit” was a pun using the words “rare” as in  “slightly cooked” and “bit” for a snack or small dish.
The geographic origin of the Welsh rarebit is also in doubt.

The anatomy of the rarebit is is always roasted cheese or a cheese sauce on toast that is then heated again in the oven.

Variations on the Welsh rarebit are:
– The buck rarebit:
A rarebit served with a fried egg on top
– The blushing bunny:
A rarebit that has tomatoes blended in with the cheese.
